White Corn Chowder

White Corn Chowder
This velvety and savory soup is a harmonious blend of tender white corn, creamy potatoes, and aromatic herbs, creating a symphony of flavors that will warm both heart and soul. Perfect for any season, this chowder offers a rich and satisfying experience that captures the essence of homestyle cooking with a touch of elegance.

Ingredients: 

    • 8 boneless skinless chicken thighs
    • 1 yellow onion diced
    • 1 cup of celery diced
    • 2 cloves garlic minced
    • 24 oz. chicken broth 
    • 2 15oz cans great Northern beans drained and rinsed 
    • 2 4oz cans mild diced green chiles  
    • 3 8oz can whole kernel corn (2 cans drained, 1 can with juices)
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 2 cups heavy cream
    • small handful fresh cilantro chopped
    • oz reduced fat cream cheese softened
  • Thickening Agent (1/4 of Corn Starch, 1/4 of ice cold water. Whisk together and add the hot chowder for constancy. Add 4 hours into cooking.)  

Instructions 

  1.  Place the uncooked chicken at the bottom of your inner cooking pan.
  2. Place all other ingredients on top.
  3. Preheat RockTablet for 30 minutes. If heating RockTablet on a cooktop,  Put inner cooking pot on the stone for a full 30 minutes while heating.
  4. Remove Inner Cooking Pot from heated stone tablet.
  5. Use hook (provided) and Place hot RockTablet inside the RockPot. Place Inner Cooking Pot on the hot stone in the RockPot.
  6. Close RockPot lid and latch closed. Cook for 6-7 hours. 

 

Heating the RockTablet by fire:
Heat the RockTablet for 30 minutes in the fire.
While stone is heating, combine all ingredients in the inner cooking pot and stir.
Place HOT stone in the bottom of the RockPot.
Put inner cooking pot (full of food) in the RockPot on the RockTablet.
Put the lid on the inner pot.
Close the RockPot and latch the lid.
Let it cook for 8 hours, once the casserole is cooked you can remove the RockTablet from the Rockpot and place food back in the Rockpot to keep warm for up to 8 hours. 

Heating the RockTablet on stovetop:
Place RockTablet on the largest burner. Place inner pot on top of the RockTablet.
Turn the heat on high. Heat the RockTablet for 30 minutes with inner pot sitting on the stone. After 30 minutes, turn off heat, remove inner pot from stone.
Place HOT RockTablet in the bottom of the RockPot. Put the inner cooking pot (full of hot food) in the RockPot on the hot stone. Close the RockPot and latch the lid.
