White Chicken Chili

Ingredients
1 Tbsp olive oil
1 large onion diced
1 jalapeno diced seeds removed
4 cloves garlic minced
4 cups chicken broth
2 - 4oz diced roasted green chilies
1tsp cumin
1/2 tsp oregano
1/2 tsp chili powder
1/2 fresh lime juiced
1 8 oz package cream cheese softened
1 1/2 cups corn -frozen or fresh
2-15oz cans of drained cannellini bean
2 1/2 cups cooked and shredded chicken- Rotisserie preferred
salt and pepper to taste

Avocado
Cilantro
Sour Cream
Corn Chips
Mexican Cheese

Instructions
1. Add oil to inner pot on stone
2. Add onion and jalapeno and saute until tender 5 - 7 minutes
3. Add garlic and chicken broth, green chilies, cumin, oregano, chili powder, corn, lime juice
4. Transfer stone and inner pot to the Rockpot as directed
5. Cover with lid and close Rockpot , let cook for 2 hours
6. Puree cream cheese and 1 can of beans
7. Add to pot , mix and replace lid , let cook for additional 30 minutes
8. Add chicken and remaining can of beans and corn, cover with lid and let cook for last 30 minutes
9. Stir and add toppings of choice and Enjoy!
Serves 6-8
Heating the RockTablet on stovetop:
Place RockTablet on the largest burner. Place inner pot on top of the RockTablet.
Turn the heat on high. Heat the RockTablet for 30 minutes with inner pot sitting on the stone. After 30 minutes, turn off heat, remove inner pot from stone.
Place HOT RockTablet in the bottom of the RockPot. Put the inner cooking pot (full of hot food) in the RockPot on the hot stone. Close the RockPot and latch the lid.
Heating the RockTablet by fire:
Heat the RockTablet for 30 minutes in the fire.
While stone is heating, combine all ingredients in the inner cooking pot and stir.
Place HOT stone in the bottom of the RockPot.
Put inner cooking pot (full of food) in the RockPot on the RockTablet.
Put the lid on the inner pot.
Close the RockPot and latch the lid.
Let it cook for 8 hours, once the casserole is cooked you can remove the RockTablet from the Rockpot and place food back in the Rockpot to keep warm for up to 8 hours.
