Chicken Cream Enchilada Soup

Get ready to indulge in the comfort of a classic dish with a twist. Our Creamy Chicken Enchilada Soup is not just a meal, it's a celebration of flavors, a testament to the joy that a single spoonful of perfectly balanced warmth can bring.

INGREDIENTS

1 medium onion

2 stalks of celery

1 jalapeno seeded

1 med carrot

4 cloves fresh garlic

Puree these fresh vegetables and set aside

2 Tbsp Butter

1/2 cup heavy cream

1 1/2 tsp ground cumin

1 Tbsp chili powder 

1 tsp dried oregano

1 15 oz can diced fire roasted tomatoes

1/4 cup tomato paste

4 cups chicken broth

1 14oz can of Black Beans drained and rinsed

1 14 oz can of kidney beans drained and rinsed

1 cup sweet corn frozen or fresh

2 cups cooked shredded chicken, rotisserie is an excellent option

 Additional Toppings:

Avocado

Sour Cream

Cilantro

Corn Chips

Jack Cheese

Queso

Instructions 

  1.  Add butter to inner pot on heated stone, after butter melts, add pureed vegetables and dried seasonings
  2. Stir and simmer 5-7 minutes with lid on pot
  3. Add remaining ingredients recover with lid and let cook on top of the stone heating for the initial 30 min.
  4. Remove Inner cooking pot from heated stone.
  5. Then transfer stone and inner pot with soup to the Rockpot.
  6. Let cook for 2 hours stirring at least once. Add 1/2 cup cream and stir for remaining 30 min.

 Heating the RockTablet on stovetop:

Place RockTablet on the largest burner. Place inner pot on top of the RockTablet.
Turn the heat on high. Heat the RockTablet for 30 minutes with inner pot sitting on the stone. After 30 minutes, turn off heat, remove inner pot from stone.
Place HOT RockTablet in the bottom of the RockPot. Put the inner cooking pot (full of hot food) in the RockPot on the hot stone. Close the RockPot and latch the lid.

Heating the RockTablet by fire:
Heat the RockTablet for 30 minutes in the fire.
While stone is heating, combine all ingredients in the inner cooking pot and stir.
Place HOT stone in the bottom of the RockPot.
Put inner cooking pot (full of food) in the RockPot on the RockTablet.
Put the lid on the inner pot.
Close the RockPot and latch the lid.
Let it cook for 8 hours, once the casserole is cooked you can remove the RockTablet from the Rockpot and place food back in the Rockpot to keep warm for up to 8 hours.
