Aloha Meatballs

Inspired by the Aloha spirit, these meatballs combine the richness of beef or pork with the exotic sweetness of pineapple and the tangy zing of teriyaki or bbq sauce. Whether you're hosting a luau-themed party or simply craving a taste of paradise, these Aloha Meatballs are sure to be a hit at any gathering.

 Ingredients

3 pounds of defrosted meatballs

20 ounce can of drained pineapple chunks

2 cups BBQ sauce

1/4 cup soy sauce 

1/4 cup rice wine vinegar

1/4 cup brown sugar

1 Tbsp freshly grated ginger

2 Tbsp of minced garlic

2 Tbsp chopped chives for garnish 

 

Instructions

1. Add frozen meatballs and pineapple chunks to the inner pot. 

2. In a medium-sized bowl, whisk together BBQ sauce, soy sauce, rice wine vinegar, and brown sugar.

3. Using a micro-plane, grate ginger.

4. Add garlic and whisk into the sauce.

5. Pour the sauce over meatballs then gently toss to coat.

6. Place the inner cooking pot on top of the RockTablet while it heating for a full 30 minutes.

7. Cook for 3 hours.

8. When done, sprinkle meatballs with chopped chives and serve. 

Serves 8 Enjoy!

 

Heating the RockTablet on stovetop:

Place RockTablet on the largest burner. Place inner pot on top of the RockTablet.
Turn the heat on high. Heat the RockTablet for 30 minutes with inner pot sitting on the stone. After 30 minutes, turn off heat, remove inner pot from stone.
Place HOT RockTablet in the bottom of the RockPot. Put the inner cooking pot (full of hot food) in the RockPot on the hot stone. Close the RockPot and latch the lid.

Heating the RockTablet by fire:
Heat the RockTablet for 30 minutes in the fire.
While stone is heating, combine all ingredients in the inner cooking pot and stir.
Place HOT stone in the bottom of the RockPot.
Put inner cooking pot (full of food) in the RockPot on the RockTablet.
Put the lid on the inner pot.
Close the RockPot and latch the lid.
Let it cook for 3 hours, once the casserole is cooked you can remove the RockTablet from the Rockpot and place food back in the Rockpot to keep warm for up to 8 hours.
