Crack Chicken Soup

Ingredients

2-3 lb boneless skinless chicken breasts raw

1 Tbsp onion powder

1 Tbsp garlic powder

1 tsp dried dill

1 tsp dried chives

1/2 tsp salt

1/2 tsp cracked pepper

4 slices of thick sliced bacon cooked  and reserve bacon grease

6 cups low sodium chicken broth

8 oz cream cheese softened

2 cups sharp white cheddar grated

3 hand full of fresh spinach or 3 cups fresh kale chopped

chopped scallions

 Additional Toppings

Crumbled bacon bits

fresh scallions

sharp cheddar

Instructions

1. Render bacon in inner pot while heating on stone, remove bacon and set aside

2. Season chicken with dried seasoning and coat on all sides

3. Place chicken in inner pot with bacon grease, watch for spatter its hot! turn chicken over after 2 min in pot

4. Add bacon slices and cover with 6 cups chicken broth,

5. Remove heated stone and inner pot and place inside the Rockpot 

6. Let it cook for 3-4 hr then shred chicken

7. Add softened cream cheese and shredded sharp cheddar

8. Add fresh spinach or kale , stir and cover with inner lid

9. let cook for another 30 minutes

8. serve with fresh scallion diced and crumbled bacon

serves 6-8 Enjoy!

 

Heating the RockTablet on stovetop:

Place RockTablet on the largest burner. Place inner pot on top of the RockTablet.
Turn the heat on high. Heat the RockTablet for 30 minutes with inner pot sitting on the stone. After 30 minutes, turn off heat, remove inner pot from stone.
Place HOT RockTablet in the bottom of the RockPot. Put the inner cooking pot (full of hot food) in the RockPot on the hot stone. Close the RockPot and latch the lid.
